INGREDIENTS
- 1½ cup cooked Petit Jean Ham, cut in strips or cubes
- 4 cups firm cooked Rice, cooled
- 1 medium onion, chopped
- ½ cup celery, cut diagonally into small pieces
- ½ cup diced bell pepper
- 2 tablespoon salad oil
- salt and pepper, to taste
- 1 teaspoon seasoning salt
- 2 tablespoon soy sauce
- 2 eggs
can add
- 1 cup sliced fresh mushrooms
- ½ cup bamboo shoots
INSTRUCTIONS
- Cook rice according to package directions for firm texture, cool.
- Place ham, onion, green pepper, celery, (mushrooms, bamboo shoots) in a large skillet; saute in oil until onions are soft.
- Add salt, pepper and seasoning salt, mixing well.
- Add rice and soy sauce, stirring after the addition of each.
- Pour well beaten eggs into the mixture and cook over medium hear, stirring constantly, until eggs are set.
- Serve immediately.
